A healthy vegetable dish that is quick and easy to make (and my children will happily eat it!).
Try to include whatever vegetables you have in the house or garden – the more colourful the better.
- Sweet potato
- Peas (frozen)
- Tin coconut cream
- Fresh Lemongrass ‘stick’ (pick when needed, to be as fresh as possible).
- Stir fry everything in a wide pan on the stove until vegetables are cooked. I normally give the pumpkin and potato a head start, as I like the other veg to be a bit crunchy on serving!
- Season with salt and pepper.
