Rainbow vegetable stir fry

A healthy vegetable dish that is quick and easy to make (and my children will happily eat it!).


Try to include whatever vegetables you have in the house or garden – the more colourful the better.

  • Pumpkin
  • Sweet potato
  • Broccoli
  • Zucchini
  • Cauliflower
  • Carrot
  • Beetroot
  • Tomato
  • Peas (frozen)
  • Tin coconut cream
  • Fresh Lemongrass ‘stick’ (pick when needed, to be as fresh as possible).
  • Stir fry everything in a wide pan on the stove until vegetables are cooked. I normally give the pumpkin and potato a head start, as I like the other veg to be a bit crunchy on serving!
  • Season with salt and pepper.
